Friday nights are pizza and movie nights for our family. Tonight we pulled out the first Christmas movie, The Polar Express. Of course we’ve been listening to Christmas music and reading Christmas books, but I think this is the first Christmas movie we’ve actually watched this year. Which is a little odd for us, but the kids watched The Muppet Show all the way back home after Thanksgiving. (Then the post Thanksgiving week proceeded to kick our tails all over North Texas.)
I also made what will always be to me a Christmas dessert: Magic Cookie Bars. There are a multiple of variations, but this is the recipe I grew up on.
Ingredients:
1/2 cup of butter (or margarine. If you must.)
1 1/2 cup corn flake crumbs (about 4 cups of cornflakes in the food processor if your grocery store doesn’t sell them. Humbugs.)
2-4 Tablespoons of sugar, to taste. I like my crust less sweet, so I use 2.
1 to 1 1/2 cup chocolate chips
1/2 cup chopped walnuts
1 1/2 (or so) cups coconut

Directions:
Heat oven to 325 degrees. Put 1/2 cup of butter in a 9×13 pan and place in oven to melt. (Watch it! Burned butter isn’t pleasant.) Combine cornflake crumbs and sugar. When butter is melted, mix in cornflake crumb mix and press flat with a spatula. Sprinkle chocolate chips, walnuts, and coconut evenly over crust. Pour condensed milk over the top, trying to avoid the far edges. Bake for 15-20 minutes, until coconut starts to brown.
Serve warm with cold milk. Merry Christmas!
